BAR SERVICE

Bar staff are employed in restaurants and bars all over the world. Their general duties include providing service to customers, while maintaining cleanliness (including the bar, tables and glassware) and good customer relations. Essentially bar staff members are responsible for drinks and light snacks, while food service staff are responsible for meals; however, in some restaurants the rules of traditional bar service may be blurred and the same person might perform both duties.

 

This course provides foundation knowledge for those attending a bar or working as a drinks waitperson.

 

COURSE STRUCTURE

The course is divided into seven (7) lessons, as follows:

 

LESSON 1: INTRODUCTION

Duties of bar staff, scope of the industry, creating a menu, alcohol and the law, staff qualities, hygiene and cleaning, bar equipment and layout, beverage-dispensing equipment, glasses, quality of service, procedures for taking orders.

 

LESSON 2: ALCOHOLIC PRODUCTS

Become familiar with the range of alcoholic products found commonly in a bar including spirits, beer and wine, liqueurs and aperitifs. 

 

LESSON 3: NON-ALCOHOLIC DRINKS

Coffee, coffee blends, grinding and making coffee, coffee variations, tea, herbal teas, storing and brewing tea, water.

 

LESSON 4: SERVICE PROCEDURES

Protocol when dealing with customers, waiting, carrying glasses and trays, maintaining hygiene, using the cash register, tipping, refusing service, understanding substance-abuse disorders, personality traits and alcohol abuse.

 

LESSON 5: MIXING DRINKS

General rules for mixing cocktails, bar flairing, terminology, general hints, measures, cocktail recipes, garnishes, liqueur coffees.

 

LESSON 6: WINE APPRECIATION

Wine selection and presentation, opening and serving wine, wine grapes and varieties, beverage lists, serving temperatures. Learn which wines go best with seafood, meat and cheese platters.

 

LESSON 7: ESTABLISHING A BAR SERVICE

Problem Based Learning (PBL), developing critical and creative thinking, project aim and definition, discussion questions, final report, consolidate skills developed in the course, to establish or improve the management of a bar service.
